I am learning Max MSP myself.  Also PureData.  Creating a beat tracker right now for a final project in a class.

Anyway, w/r/t sound physics simulation, there is work being done in this area.  Check out the Gamma group at UNC:

They have a couple of cool videos -- a metal cylinder rolling across a table, water falling, etc.</description>
